In fact, it depends on culture. Since this question, I think that part of the culture that feed on the genitals and the anus.
Here in the Philippines, anus chickens are sometimes intentionally eaten. Meanwhile, the testicles of certain animals has (I think there should be a bull, but I'm sure) a soup as soup number 5 (do not ask me why the name is so I do not know). The soup is an aphrodisiac.
There are cultures that the genitals of animals to eat, especially for the supposed aphrodisiac effect. (Always runs on sex.)
No, do not eat, and the parts. The bodies installed inside, so they cut everything from the outside and by all the internal organs (stomach, intestines, etc.) during their retreat.
